I've been meaning to make homemade almond milk for the longest time, and finally tried it this weekend. Amazing! It was SO good. It was easy and didn't take very long, and its definitely a step up from store bought. Even buying organic, it can be difficult to finding almond milk without additives I would prefer to avoid. This recipe is seriously delicious, slightly sweet and spiced with cinnamon.
Soak 1 cup of almonds in water overnight (I used a 32oz glass jar). In the morning, drain almonds and put in blender (we love our Vitamix) with 3.5 cups of water. Blend well, then add 4 pitted dates and 1/2 tsp vanilla (I used 1/4 tsp vanilla powder), and blend again. Strain in a nut milk bag. Add a pinch of sea salt and 1/2 tsp cinnamon, whisk together. Makes about 32oz, store in a glass jar. Suggest mixing slightly before using, the cinnamon and vanilla settles to the bottom. Recipe from Collective Evolution.
The remaining almond/date material can made into "flour" and used for baking. I spread it out on parchment paper and dried in the oven on low heat. When it was dry to the touch I used a food processor to get a finer and more even texture. Planning to throw it into some blueberry grain-free muffins!
