Recently I read that most people eat a maximum of 10 different plants on a regular basis. Only 10! A wide variety of fruits and vegetables, as well as herbs and spices, provides the best opportunity for optimal nutrition. So - I challenge you to get outside of your normal routine and try something different!

I was thrilled to get this gorgeous romanesco in our farm box this week. Usually I customize it, picking and choosing everything we get. I forgot, and ended up with this wonderful surprise. Romanesco is similar to cauliflower in taste, with a truly stunning appearance. Normally I would have just roasted this, but saw a recipe for Red Curry Romanesco on the Farm Fresh to You site. I had green instead of red curry paste, and changed the recipe a bit. It was delicious! A big hit here, and my toddler loved it too. This was perfect as a side dish, but you could add more veggies and serve over rice, or add protein if you like.

Green Curry Romanesco

1 head of romanesco, cut into florets

1/2 of an onion, diced

2 cloves of garlic

1 tablespoon coconut oil

2 tablespoons green curry

1 can of coconut milk (full fat version and BPA free can preferred)

salt to taste (could also add a dash of fish sauce instead)

chopped cilantro

Directions

  • Saute onion and coconut oil for a few minutes. Add garlic and stir.
  • Add romanesco and cook several minutes, stirring occasionally
  • Add coconut milk and curry, mixing well
  • Simmer on low for about 10 minutes, or longer for softer veggies and a thicker sauce
  • Add salt to taste, and garnish with cilantro
